Speaking of practice, in the beginning, I almost always practiced on a sheet of parchment paper before working on my cookies. In the beginning, it helps to make a few different consistencies and have them at the ready to practice. I usually have a thicker consistency icing and a slightly looser consistency for flooding larger sections of letters. If you are not naturally gifted with this talent, I’ve found that your royal icing consistency is usually the biggest challenge. There are some bakers that just have the gift of immaculate writing and I love to admire their work!
